A Fresh Summer Favorite

When the summer months come, the last thing we want to do is spend a lot of time in the kitchen. Resorting to quick recipes gives us more time to enjoy the outdoors.

When it comes to dips, there are a ton of recipes out there. Dips are the perfect dish as an appetizer or snack. The summer months are perfect for taking advantage of the fresh vegetables that are in season. This simple avocado dip is easy to make and a healthy alternative to store-bought dips that are often filled with additives and ingredients we can all do without.

Avacado Dip

Ingredients:

  • 3 ripe avocados (scooped out of peel using a spoon and chop)
  • 1 lime (juice squeezed)
  • 1/2 cup of mayonnaise
  • 3 cloves of garlic (chopped)
  • 2 ripe tomatoes (chopped)
  • salt and pepper (to taste)
  • thick pita bread (cut in triangular wedges)
  • crackers (of your choice)

Directions:

  1. Cut avocados, ripe tomatoes, and garlic in medium sized pieces. For best results in taking avocado out of its peel, use a spoon to scoop it out.
  2. Place cut avocados, ripe tomatoes and garlic in an electric chopper or blender
  3. Add juice of 1 lime, 1/2 cup of mayonnaise, salt and pepper
  4. Blend all ingredients until well mixed. It should be a fairly thick consistency
  5. Place dip in a small bowl, cover, and refrigerate for at least 1 hour before serving

Serve With:

This fresh summer dip tastes great with oven toasted pita wedges. To make:

  1. Using thick pita bread, cut into triangular wedges
  2. Place pita wedges on a non-stick cookie tray
  3. Preheat oven to 375 degrees
  4. Place wedges in oven and bake until slightly crisp and lightly golden brown
  5. Serve with avocado dip and enjoy!

Alternatively, you can serve this dip with any crackers of your choice. Try whole wheat crackers for a healthy option.

If you want to add some color for presentation, chop a red pepper in small pieces and place overtop of the dip. The bright red from the pepper will look sharp and add extra flavor to the dip.

Dip will remain fresh in the refrigerator for up to 2 days. Be sure to stir dip well before serving each time.

This simple avocado dip puts a twist to a typical avocado recipe like guacamole. By including ripe tomatoes, garlic, and lime juice, it adds a zesty tang to the overall flavor.
