Egg Salad, Goat Cheese, Tortilla Wraps Are Season Staples

These are easy, tasty sandwiches that will satisfy all summer long.

While a winter lunch may consist of soup and salad, there's something about summer that insists on sandwiches. Perhaps it's their easy portability (beach picnic, anyone?) or their please-everyone mentality, but whatever the reason, sandwiches never go out of style.

The following sandwich recipes, besides being delicious, are quick and easy to make -- there's no real "cooking" involved.

Egg Salad Sandwich

Ingredients:

  • hardboiled eggs
  • mayonnaise
  • dash of paprika (to taste)
  • choice of bread (sourdough, wheat, dark rye)
  • lettuce
  • dijon mustard (optional)

Directions:

  1. Peel hardboiled eggs and place them into a bowl. Wiith a fork or a whisk, mash eggs until nearing desired consistency.
  2. Add spoonful of mayonnaise. Continue mashing eggs and mayonnaise mixture until desired. Add dash of paprika to mixture, stir lightly.
  3. Choose bread type. If eating at home, consider toasting bread first. If preparing sandwich for travel, skip the toasting. Note: If taking the sandwich in a lunchbox or to a gathering, consider packaging bread and egg salad separately to avoid sogginess. Assemble right before eating.
  4. If desired, spread a thin layer of dijon mustard onto bread. This step is optional.
  5. Arrange lettuce on bread. Top with egg salad mixture and other half of bread.

Egg salad can also be bought already-made at supermarkets to save time.

Serve with: sweet baby gherkins and low-sodium potato chips.

Turkey Goat Cheese Sandwich

This recipe is adapted from a sandwich on the menu at The Champagne Bakery. Try this easy make-at-home version.

Ingredients

  • baguette
  • goat cheese
  • green onion
  • thin sliced, shredded turkey (look in deli/lunchmeat aisle at supermarket)
  • cucumber

Directions

  1. Slice baguette in half, length-wise.
  2. Spread a generous layer of goat cheese onto each half of bread.
  3. Chop green onion. Sprinkle green onion onto goat cheese.
  4. Layer turkey over cheese and onion.
  5. Thinly slice cucumber. Add several cucumber slices, then put halves together.

Serve with: red grapes (the sweetness compliments the goat cheese) and a side of potato or macaroni salad

Caprese Sandwich

Ingredients

  • baguette
  • buffalo mozzarella
  • tomato
  • basil
  • balsamic vinegar

Directions

  1. Slice buffalo mozzarella and tomato.
  2. Slice baguette in half, length-wise.
  3. Arrange mozzrella on top of bread.
  4. Drizzle balsamic vinegar onto mozzarella.
  5. Top with tomato and basil slices.
  6. Add other half of baguette. (This sandwich is also delicious "open-face".)

Serve with: canned pears and pretzels

Tortilla Wrap

Ingredients

  • flour tortilla
  • herb mayonnaise OR sour cream
  • chicken strips
  • grated cheese (try cheddar or jack)
  • prepackaged lettuce
  • avocado
  • green onion

Directions

  1. Lay tortilla flat. If using herb mayonnaise, spread a thin layer of mayonnaise onto tortilla. If using sour cream, SKIP this step.
  2. Sprinkle prepackaged lettuce onto tortilla. Top with chicken strips and grated cheese.
  3. Slice avocado and chop green onion. Add both to tortilla.
  4. Roll tortilla into "wrap". If mayonnaise was skipped, add sour cream on the side.

Serve with: watermelon and flavored (such as sour cream and onion) potato chips
