What do you do with all the fish your husband, relative or friend has just caught? Are you unsure of what you want to do with the Mahi Mahi or Tuna you just purchased at the local fish market? Consider preparing fish tacos as a meal for your whole family or for you guests. Most people think about fish tacos as fried fish and often do not consider serving fish tacos because they assume they are very unhealthy. There a newer and healthier versions of fish tacos that can both taste great and be healthy for your waisteline. Here is a fish taco recipe that tastes great in the summertime. It can be prepared with either mahi mahi, tuna, or salmon. Ingredients:
Prepare fish for grilling. Drizzle olive oil over fish as well as two slices of lemon and salt and pepper fish. Make the green sauce- In cuisinart add one cup of low fat mayonnaise, 1 bunch of cilantro, 3 dashes of hot sauce, one small can of green chilies, and the juice of 2 limes (save the other 2 limes as a garnish). Keep in refrigerator while grilling fish. Chop and dice the head of cabbage. Add to small bowl. Put cheese in a separate small bowl , salsa in a small bowl, and sour cream in a small bowl. Place on the table for taco "fixings". Also, bring the green sauce to the table and the sliced limes. Warm Tortillas in the oven Grill fish to desired doneness. Flake the fish into small pieces and put in a bowl on the table. Bring the tortilla's to the table and have guests and family members make their own fish tacos. Instruct them to take one tortilla and place a portion of the fish in the center of the tortilla. Place a small amount of cabbage, cheese, sour cream, lime juice and the green sauce on top of the fish, roll the tortilla up and enjoy! What to Serve With Fish Tacos?Consider serving some black beans with tacos. You can add both white oninon, cilantro, and some green chilies to the dish while it is cooking to add a little flavor and color. Mexican rice, white rice, and refried beans are also great side dishes to include with fish tacos. Some people also choose to put the black beans, the rice or the refried beans in the fish taco instead of as a side dish. A mexican green salad also tastes great with the fish tacos. For the green salad, add green baby lettuce, lots of avocados, grilled corn, numerous tomaoes, a small amount of corn chips and 1 part thousand island dressing to 1 part salsa for a dressing.
