Summer means being outdoors, enjoying the sunshine and taking a picnic to the park.
Picnic meals don’t have to come from a fast food chain or from the street food vender. With some simple ingredients and a little time, a great, easy and affordable picnic meal is ready to go.
1 1/2 tablespoons Galleria brand Dilly Dip Herb and Spice Mix (If you can’t find dilly dip mix, then just mix together a few teaspoons of onion powder, parsley, and dill)
½ cup onion, diced
½ cup green or red bell pepper, diced
black pepper and salt to taste
Directions:
In a small bowl, whisk together mayonnaise, sour cream, and dilly dip mix. Refrigerate for an hour or so.
Meanwhile, in a large saucepan, bring to a boil the potatoes and water, dashed with salt. Lower the heat and simmer for 10-15 minutes until potatoes are tender.
Drain potatoes in a colander. Place the colander over hot, empty pot, cover with clean, dry towel, and allow potatoes to steam for 5 or so minutes.
Cut potatoes into quarters or in half and place in a large bowl.
While the potatoes are still warm, take dilly dip dressing out of the refrigerator and dress it over the potatoes to moisten.
Add onion, green or red bell peppers, and approximately 1 teaspoon of salt and 1 teaspoon of pepper.
Toss well and refrigerate for a few hours to let flavors blend. Serve cold or at room temperature.
Chicken Salad Sandwiches
Ingredients:
3 boneless, skinless chicken breasts (stewed, cooked through and diced in small pieces for about 3 cups)
1/3 cup mayonnaise
½ cup fat free sour cream
1-2 tablespoons fresh-squeezed lemon juice
2 cups seedless green or red grapes, cut in half
½ teaspoon salt
½ teaspoon pepper
½ teaspoon dried parsley
1 teaspoon poppy seeds, if desired
1 cup pecans or walnuts, chopped
Large, buttery croissant rolls
Romaine lettuce or other favorite lettuce, cut to fit inside croissants
Directions:
Mix mayonnaise, sour cream and lemon juice together in a large mixing bowl.
Add cooked, diced chicken and chopped pecans or walnuts. Stir well.
Add grapes, parsley, poppy seeds (if desired), salt and pepper. Stir well and refrigerate for 1-2 hours.
Remove from refrigerator and stir chicken salad.
Taking individual croissants, cut down the middle, if not already cut in half.
Place a romaine lettuce leaf on one side of the croissant and dip a few tablespoons of the chicken salad mixture onto the lettuce. Top with other side of the croissant, and serve.
