It's summertime, and it's hot outside. Something refreshing and delicious is in order.
To celebrate the Fourth of July or any day during the summertime, here are a few recipes that are quintessential for summer. The Dutch Apple Pie, Watermelon Limeaid and Cream Cheese Brownies with Berries are great for parties and are kid-friendly.
Preheat oven to 375 F. Brush bottom and sides of crust evenly with egg yolk; bake on baking on baking sheet until light brown for about 5 minutes. Remove crust from oven.
Combine sliced apples, 1 tablespoon lemon juice, 1/2 cup sugar, 1/2 cup brown sugar, ¾ cup flour, ¼ teaspoon salt, 1 teaspoon cinnamon and 1/3 teaspoon nutmeg. Mix well and spoon into crust.
Mix remaining 3 tablespoons flour, ¼ cup sugar, ¼ cup brown sugar and 1/3 cup butter with fork until crumbly. Sprinkle topping mixture evenly over apples.
Bake pie on baking sheet until topping is golden and filling is bubbling; about 50 minutes. Cool thoroughly on wire rack, at least 4 hours. Serve at room temperature.
Watermelon Limeaid
Ingredients:
2 limes
4 cups seedless watermelon, sliced in small cubes
1/2 (2-liter) Sprite or 7-Up or another lemon-lime soda
1 (10 ounce) can frozen limeaid mix
Directions:
In a blender, mix the watermelon slices with ice cubes until liquid consistency.
Add lemon-lime soda and juice of two limes, blending well.
Add the can of frozen limeaid mix, and stir.
Refrigerate or serve immediately with watermelon wedges and lime wedges. To kick it up for the adults, add a few shots of tequila and stir well.
Cream Cheese Brownies with Berries
Ingredients:
1 package yellow cake mix
1 stick butter, melted
3 eggs
1 box confectioners sugar (powdered sugar)
1 (8 ounce) package cream cheese, at room temperature
1 cup raspberries (or pick your other favorite berry)
1 cup blackberries (or pick your other favorite berry)
Directions:
In a large rectangular casserole baking dish, spray the inside with non-stick cooking spray, and preheat the oven to 350 degrees.
Blend the yellow cake mix, butter and 1 egg, and stir well, incorporating all ingredients. Spread into the casserole dish, and bake for 10 minutes.
While the crust is baking, mix together the room-temperature cream cheese, confectioners sugar and 2 eggs. After the crust is done baking, spread the mixture on top, and add the raspberries, blackberries or other red or blue-colored berries of your choice.
Bake for 20-30 or more minutes until golden on top. Cool and cut into small squares and serve or refrigerate until ready to serve. This is great served with fresh berries on the side.
