Enjoy these easy to make and healthy frozen treats made from fresh fruit.
Frozen treats are a tasty way to cool down when the weather is hot. They are also easy to make, convenient to keep on hand and can be made from a variety of ingredients. Using fresh or slightly overripe fruit keeps the treats healthy and naturally sweet. All of the following recipes use the same primary directions and none use additional sweeteners. They are as healthy as the ingredients put into them.
Each of the recipes below mention specific fruits, but any fruit can be used if pureed or finely mashed. Juices can also be exchanged for other fruit flavors. If fresh fruit is not available, try replacing it with a can of fruit cocktail. Experiment with different fruits and ingredients to create a new family favorite.
Primary Directions
Choose how to freeze the popsicles and make sure they containers are clean and ready to use. Options include:
Commercially available popsicle containers
Ice cube trays: after filling with the treat, cover in plastic wrap or waxed paper and stick a toothpick into each cube
3 or 5 ounce cups (paper, plastic or metal): cover each cup with plastic wrap or waxed paper and put a long toothpick or popsicle stick into each
After choosing the container, prepare any of the recipes below. To freeze:
Pour the popsicle mixture into the containers, leaving a small amount of space at the top.
Put on the container’s cover, whether a commercial cover, plastic wrap or waxed paper. Make sure to include the stick.
Place in the freezer for a few hours. The time depends on the temperature of the freezer and the size of the popsicle. If prepared in the evening even the larger sized popsicles are usually ready by late morning.
Remove from the container. If the popsicle is stuck, run the bottom of the container under cool water for a few seconds to loosen it.
Eat and enjoy.
Orange-Banana Popsicles
1 can frozen concentrated orange juice
3 ripe bananas
Directions:
Combine the concentrate and bananas in a blender.
Blend until smooth.
Berry Popsicles
1 3oz package gelatin (plain or a fruit flavor)
½ cup berries, pureed
2 cups boiling water
2 cups cold water
Directions:
Dissolve gelatin in boiling water.
Mix in berries and cold water.
Fruity Yogurt Popsicles
2 cups yogurt (plain or vanilla)
1 cup mashed fruit (bananas, berries or peaches work well)
½ cup orange or apple juice
Directions:
Combine all of the ingredients in a blender.
Blend until smooth.
Strawberry-Banana Creamsicles
1 cup mashed bananas
1 cup sliced strawberries
1 14oz can evaporated milk
Directions:
Combine all of the ingredients in a blender.
Blend until smooth.
Apple-Banana Popsicles
1 can concentrated orange or apple juice
2 apples, cored and peeled
Directions:
Combine the concentrate and bananas in a blender.
Puree until smooth.
