Grilled apple pork tenderloin with lime and maple syrup is a good summer recipe which can be served with zucchini, a salad, or a baked potato.

Pork tenderloin is one of the most tender cuts of pork and it makes a good menu choice for a backyard barbecue. However, It can become dry when overcooked on a grill so careful monitoring is needed.

Pork tenderloin can be marinated with various flavors to bring out the best flavor. Some marinades are purchased from the supermarket and some marinades can be prepared at home. For instance, barbecue sauce is commonly used. However, maple syrup can be added to a marinade to enhance a pork dish.

Grilled Apple Pork Tenderloin with Lime and Maple Sweetness

Preparation and Cooking Time: 6.5 Hours including refrigeration time

Serve: 4-6

Ingredients:

  • 1 boneless pork tenderloin
  • 1/4 cup maple syrup
  • 1 tsp rosemary
  • 1 tsp oregano
  • 1 tsp black pepper
  • 1/4 cup lime juice
  • 1 lime zest, grated
  • 1/4 cup cooking oil
  • 1/4 cup apples, sliced

Directions:

  1. Purchase pork tenderloin and trim any excess fat.
  2. Combine maple syrup, rosemary, oregano, black pepper, lime juice, and zest in a lidded jar and shake for 2 minutes.
  3. Use half of maple mixture and pour into a large resealable bag. Add the pork tenderloin to the bag and remove access air before sealing.
  4. Place the maple marinate in the refrigerator for 6 to 18 hours (rotate 1 or 2 times while in the refrigerator). Also, keep the remaining maple marinade in a covered medium bowl and refrigerate.
  5. Remove both the pork tenderloin from the bag (allow to sit at room temperature while setting up the grill). Take the remaining refrigerated maple marinade and place on the table or near the grill.
  6. Prepare the grill ,as usual. Remove the pork tenderloin from the maple mixture and rub the tenderloin with the apple slices for a sweet flavor. Place in the grill's center then discard the used maple mixture.
  7. Brush the pork tenderloin with cooking oil on both sides and cover the tenderloin.
  8. Cook for 15 to 20 minutes and turn every 2 minutes for evenness.
  9. Keep a meat thermometer nearby for verifying the internal temperature when the pork tenderloin is done. Remove the tenderloin from the grill.
  10. Place tenderloin in a foil and add the refrigerated maple marinade. Close and let it stand for 5 to 7 minutes. Serve.

Serving Suggestions with Pork Tenderloins:

Zucchini: Grill whole or halved for approximately 20 minutes. Add black pepper and fresh basil leaves.

Salads: Prepare a simple garden salad with swiss chard and diced beets and add summer fruits such as guava and currants. Sprinkle herbs and spices.

Baked Potatoes: Prepare on the grill inside of foil. Serve with sour cream and black pepper.
