Strawberry and Vanilla Ice Cream Cake is the perfect summer dessert or for any occasion. It makes a wonderful ice cream birthday cake. For a quick version, store bought ice cream can replace the home made ice cream.
Strawberry and Vanilla Ice Cream Cake Recipe
3 cups softened strawberry ice cream (homemade* or store bought)
3 cups softened vanilla ice cream (homemade* or store bought)
10 medium size chocolate chip cookies, crumbled
1/2 cup chocolate sauce* for drizzling on top of ice cream cake

Chocolate Sauce Recipe
6 oz. semi-sweet chocolate, chopped
1/2 heavy cream (35%)
1 tsp vanilla
How to Make the Chocolate Sauce
Place chopped chocolate in a small bowl.
Heat cream in a small saucepan over low until the cream comes to a boil
Pour the hot cream over the chopped chocolate.
Let stand until the chocolate melts and then add the vanilla and stir until smooth.
Store the chocolate sauce in the refrigerator until ready to use.

1 1/2 quart ice cream maker machine
Strawberry Ice Cream Recipe
Yields: 5 cups
1 ½ cups fresh strawberries
1 ½ cups heavy cream (35%)
1 ½ cups whole milk
2 egg yolks
½ cup sugar
1 3-inch vanilla bean, split lengthwise
How to Prepare the Strawberry Ice Cream Mixture for the Ice Cream Maker Machine
Wash and hull strawberries.
Finely chop strawberries in a food processor, set aside.
Combine cream and milk in a medium saucepan over medium heat.
Scrape out seeds from both halves of vanilla bean and add to cream and milk mixture.
Cook until mixture almost comes to a boil (about 4-8 minutes).
Reduce heat to low.
Beat egg yolks and sugar in a small bowl until light yellow and smooth.
Add 1/4 cup milk/cream mixture to the eggs whisking until combined.
Slowly add egg mixture to the milk/cream in saucepan whisking continuously until mixture coats the back of a spoon. Cool completely by either storing mixture in a covered container in the refrigerator overnight or chill over an ice bath for 30 minutes to make the ice cream right away.
When the mixture has cooled, add the chopped strawberries and mix well.
Pour strawberry mixture into the freezer bowl of the ice cream maker machine and follow the manufacture's instructions.
Transfer the ice cream to an air tight container and freeze for about 2 hours or until firm.
Vanilla Ice Cream Recipe
Yields: 5 cups
2 cups heavy cream (35%)
2 cups whole milk
1 4-inch vanilla bean, split lengthwise
2 egg yolks
2 tablespoons pure vanilla extract
How to Prepare the Vanilla Ice Cream Mixture for the Ice Cream Maker Machine
Combine the cream and milk in a medium saucepan over medium heat.
Scrape seeds from vanilla bean and add to the cream and milk mixture.
Heat until mixture almost boils. Reduce heat to low.
Beat egg yolks, sugar and vanilla in a small bowl until pale and smooth.
Add 1/4 cup of the hot cream and milk mixture and stir until well combined.
Gradually add egg mixture to the cream and milk mixture whisking constantly to prevent the eggs from curdling.
Cook over low heat until the mixture is slightly thickened and mixture coats the back of a spoon.
Cool completely by storing the mixture in a covered container in the refrigerator or chill over an ice bath if ice cream is to be made right away.
Pour strawberry mixture into the freezer bowl of the ice cream maker machine and follow the manufacture's instructions.
Transfer the ice cream to an air tight container and freeze for about 2 hours or until firm.
How to Assemble the Strawberry and Vanilla Ice Cream Cake
Spread the 3 cups of strawberry ice cream in the cooled Oreo cookie crust.
Spread with half of the crumbled chocolate chip cookies.
Place the crust in the freezer for 5 to 10 minutes to let ice cream set.
Remove from freezer and spread the 3 cups of vanilla ice cream on top of the crumbled cookies or with an ice cream scooper, scoop out 8 balls of ice cream and arrange on top of ice cream cake.
Top the ice cream cake with the remainder crumbled cookies.
Drizzle with chocolate sauce.
Place in freezer until ready to serve.
Remove ice cream cake from freezer and let stand for 15-20 minutes before serving.
